Hyderabadi veg dum biryani step by step

  1. Firstly soaked the basmati rice for 30 min and soak saffron in milk…
  2. Then heat the vessel add water add salt,lemon juice and oil.when water boiled then add soaked rice and cook for 5 min in high flame…
  3. After rice cooked 60% switch off flame and strain it…keep it aside.
  4. Now take a pan add oil heat the oil add chopped onion then fry the onion till golden and crispy..remove excess oil.
  5. Use the same oil for gravy…heat the oil add cinnamon,cardamom,cloves,black peppercorns,cumin seeds and bay leaf….
  6. Now add finely chopped onion cook until onions slightly brown then add ginger garlic paste and mix well…
  7. Add coriander powder,cumin powder,turmeric powder,kashmiri lal mirch,biryani masala,salt and cook until it starts leaving oil.
  8. Now add potatoes,cauliflower,carrots,green peas then let them cook in it.also add curd and cook on low flame until combined…
  9. Add paneer and mix well.take a mixture grinder add mint,coriander leaves and green chilies..blend and make a smooth paste..then add paste and water…cover and cook for 2 min.
  10. Start layering by rice spread desi ghee coriander leaves crush birista…put the rest of the rice 2nd layer put coriander leaves spread ghee fried onion and saffron soaked milk cover with a lid..seal it with dough.cook for 5 min.
  11. Put a tawa to avoid direct heat cook for 10 min..cut the dough in center….
  12. Biryani is ready to eat serve hot…
